BENEFITS OF AVOCADOS

For the taste, texture, nutrition and versatility, the avocado is almost 500 years conquering the world's most demanding palates. Originally from the highlands of Guatemala, central and eastern Mexico, this fruit can be savored alone, with a pinch of salt, as a garnish for meat, as the basis for other dishes, in soups, in the traditional guacamole and even snow!

Avocados protect the heart with their fiber, oleic acid, and potassium. Eaten with healthy fats, they can lower the bad LDL levels by 13.5 mg/dl and aid in weight loss. Toss them with colorful veggie salads to get more eye-protective antioxidants. As avocados fight inflammation, they can be added to diets for atherosclerosis, early-stage Alzheimer's, arthritis, and cancer. Eat 50 g avocado flesh a day, scraped close to the peel.

STAGES OF RIPENESS

STAGE 1

HARD
Very hard fruit. Usually green in color, some fruit may be a darker shade (25 Lbs of pressure or more).

STAGE 2

PRE-CONDITIONED
Ready to eat in approximately 3 days if held at room temperature (15-20 Lbs of pressure).

STAGE 3

BREAKING
(Pre-Ripened) Sligh give to fruit. Ready to eat in approximately 2 days if held ar room temperature (10-15 Lbs of pressure).

STAGE 4

FIRM RIPE
(Pre-ripened) Yields to gentle pressure. Good for slicing. Fully ripe nex day if held at room temperature (5-10 Lbs of pressure).

STAGE 5

RIPE
Easily yields to gentle pressure. Good for all users. Will remain in this condition for 2-3 days if held at room temperature (5 Lbs of pressure).

COLOR

Unripened fruit is usually green, while ripe fruit is usually dark green to back. However, during certain times of the year due to maturity, hard fruit can be black in color. Uniform softnesss is a better indicator of ripeness.

STORAGE

Stage 2-4 fruit can be help at room temperature (65°F - 70°F) in area with good circulation to continue ripening. Stage 4-5 fruit can be stored at 36°F - 40°F for up to one week.
